One of the most common questions I get is: "Do you add berries or chocolate to your coffee?"

And honestly, almost every time it happens, I am caught off-guard. My first reaction is disbelief & the confused stare which comes along.

"How can you think that I am adding FLAVORS to coffee"

But then again, in a world full of artificial flavors, additives and what not, the consumers are not wrong to assume that the wild berries they taste in our coffees have been artificially ingrained. So what is the truth?

The simple answer is: No. We don’t add anything. These incredible flavor notes are naturally occurring, and understanding how they develop is a journey through agriculture, chemistry, and sensory science.

Let’s break it down.

1. Coffee Is a Fruit — And It Shows

The coffee bean is actually the seed of a fruit, commonly called a coffee cherry. Like any agricultural product, the environment where it’s grown plays a critical role in shaping its flavor.

  • Altitude: Higher elevations (over 1200m) lead to slower cherry maturation, which builds more complex sugars and acids — resulting in brighter, fruitier coffees.
  • Soil & Climate: Volcanic soil, rainfall cycles, and sunlight exposure all subtly influence the bean’s chemistry — just like terroir affects wine grapes.

 

These natural factors can result in notes like stone fruit, citrus, florals, or nuts — and none of it is artificial.

2. Processing Unlocks the Flavor Spectrum

After harvest, the way coffee cherries are processed is pivotal.

  • Washed (Wet) process typically leads to cleaner, brighter profiles — think lemon, green apple, or jasmine.
  • Natural (Dry) process keeps the beans in contact with fruit pulp longer, enhancing fruity and jammy flavors.
  • Honey Process creates balanced & sweet profiles. Think berries, stone fruits, milk chocolate.
  • Fermentation can bring out tropical notes, spiced undertones, and wine-like complexity.

 

These are microbial and enzymatic transformations, not flavor additions. The sugars and acids in the fruit break down in specific ways depending on the process — much like cheese, wine, or kombucha.

3. Roasting Brings Out What’s Already There

A skilled roast doesn’t “flavor” the bean — it reveals what’s inside.

  • Lighter roasts tend to preserve acidity and highlight subtle notes like florals, citrus, or berries.
  • Medium roasts can coax out caramel, nuts, and balanced sweetness.
  • Darker roasts reduce acidity and amplify body, giving notes of chocolate, spice, or toasted nuts.
